Holy shiitake! Black bean & avocado quesadillas with grilled shiitake recipe

When a certain food has been used as medicine in Japan and China for centuries, you know it must be good! Shiitake mushrooms are packed with vitamins B and D, known to improve immune function, help lower cholesterol, and fight growth of cancer cells. Want to boost your immune system? BLACK BEAN & AVOCADO QUESADILLA WITH GRILLED SHIITAKE

 

INGREDIENTS


For the black beans:

  • 1 can black beans, with liquid
  • 1 shallot, finely chopped
  • 1 large garlic clove, finely chopped
  • 4 organic sundried tomatoes, roughly chopped
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1/8 tsp dried chili flakes
  • sea salt to taste


For the guacamole:

  • 1 ripe avocado, cut into cubes
  • a squeeze of lime
  • a few sprigs of coriander from the garden, finely chopped
  • sea salt & black pepper to taste


For the grilled shiitake:

  • 3 handfuls (150 grams) shiitake mushrooms from the garden, sliced
  • sea salt & black pepper to taste


To serve:

  • 8 wheat tortillas
  • a few sprigs of coriander from the garden

 

DIRECTIONS

Black beans: Throw in all of the ingredients for the beans in a small pan over medium heat. Let it simmer. When the sauce reduces slightly and reaches a creamy consistency, you’ll know it’s ready!

Guacamole: Roughly mash all of the ingredients for the guac in a bowl. Whatever consistency you prefer!

Grilled shiitake: Heat a non-stick grilling pan on the stove. Salt the shiitake mushrooms to taste, and when the pan is super hot (but not smoking) throw in the shrooms! Tumble them in high heat until they smell and look toasty (only a few minutes). When they’re ready, set them aside and season with freshly cracked black pepper.

To assemble & toast: Spread your guac on a tortilla, layer on ¼ of the shiitake mushrooms and pour over a few spoonfuls of the spicy black beans. Place another tortilla on top & toast in a wide pan on medium-high heat for a minute or two until golden brown. Flip the tortillas over carefully! Repeat for all four!
